Medicinal Lemon balm & Hempseed cookies

Ingredients:

Optional: add 1 ml of Lemon balm extract for more medicinal potency, for example So Well lemon balm extract. And if you like texture, then I add a handful of finally chopped dried figs

Method:

  • Preheat oven to 180C
  • Cream together coconut oil, yogurt and sweetener. If using maple syrup or honey, you may add slightly more spelt four at the end if the dough is too wet for forming cookies. 
  • Add lemon juice, lemon balm and hemp seeds and mix well. Gently stir in 1 cup at a time and mix until well combined. Drop rounded tablespoonfuls of dough onto cookie sheet or form a small bowl and press into cookies but the dough will be slightly sticky. Sprinkle with hemp seeds and decorate with little chamomile or feverfew flowers. 
  • Bake for 10 – 15 min depending on cookie size. They are ready when slightly golden. Cool down and serve with any of your spring tea blends.

Lemon balm (Melissa officinalis) used in this recipe is a member of the mint family and considered a calming herb. It was used as far back as the Middle Ages to reduce stress and anxiety, promote sleep, improve appetite, and ease pain and discomfort from indigestion (including gas and bloating, as well as colic).
